Honey does not spoil in heat, but weeks in a 45°C car or on a balcony darken it and dull its flavour. Keep it sealed in an air-conditioned kitchen cupboard, away from direct sun; it does not need the fridge. If the courier cannot reach you, ask them to hold the parcel rather than leave it outside.

Anyone who has shopped for Sidr in Dubai knows that premium honey attracts fakes: syrup-cut jars, mislabelled origins and prices too good to be real. Mad honey has the same problem, and it is easier to fake because few buyers know its taste. Before you buy from any seller, whether on Instagram, a marketplace or a souq stall, check four things: a batch number that matches a published lab report; a named harvest district and season; a dark amber-to-red colour with a bitter finish and a warm tingle; and a price that reflects hand-cut cliff honey. Gurung hunters in Lamjung cut comb twice a year, and the two harvests differ. The spring harvest, in April and May, comes while rhododendrons flower on the Annapurna slopes, so it is darker, more bitter and usually stronger. The autumn harvest, in October and November, carries mixed mountain nectar and tastes milder. We print the season and batch number on every jar, and the lab report shows the grayanotoxin level we measured.
